Baked Acorn Squash

1 acorn squash
2 tablespoons melted butter
2 tablespoons maple syrup
2 tablespoons brown sugar

Preheat oven to 350 degrees.  Slice acorn squash in half.

Scoop out seeds and pulp.

Place upside down in baking dish sprayed with cooking spray.  Bake 30 minutes.

Turn over so cut side is up.  Salt to taste. 

In a small bowl, combine butter, syrup, and sugar.  Mix well.  Spread on squash, covering the flesh completely.  Bake an additional 20 to 30 minutes.

Spoon the liquid in the acorn over the flesh of the acorn and serve.
 
 This easy squash recipe is the way my mom made it when I was a little girl.  I love the sweet savory taste with just a hint of maple flavoring!

Acron Squash Tip


It can be hard to cut an Acorn Squash.  To make it easier, I take a fork and prick the skin on one side in a crease made by the ribs of the acorn, from the end to the stem.


 
Microwave the squash for 2 minutes.  Use hot pads to remove the squash from the microwave and place on a cutting board. Cut the squash along the line where you pricked it with the fork.  Now you are ready to make my Acorn Squash recipe that I will be posting on Friday.

Potato and Bacon au Gratin

6 (2 pounds) medium potatoes
8 slices bacon, cooked crumbled 
3 tablespoons butter or margarine
1 small onion, diced
1 1/2 tablespoons flour
2 cups milk
1 (8 ounce) package shredded cheddar cheese

Preheat oven to 375 degrees.  Peel potatoes and slice thinly.  You can leave the peel on if you would like.

In 2 quart baking dish, arrange 1/3 of the potato slices.  Sprinkle half of the bacon on top.  

Add an additional 1/3 of the potato slices.  Sprinkle the remaining bacon over top.  

Arrange the remaining potato slices on top.

In medium saucepan, saute onion in butter until translucent.  Add flour, cook 1 minute.  



Add milk and cheese.  Salt and pepper to taste.  
Cook over medium heat until cheese is melted.  


Pour over potatoes.  Bake one hour, until golden brown.  If the potatoes are not tender after an hour, cover with aluminum foil and bake an additional 15 to 20 minutes.


I finally feel well enough to get back to blogging.  Who knew a small cut on my foot and walking in the ocean in South Africa would cause me so much trouble.  Outside of that, I am in great health and glad to be getting back to my normal schedule.
