Taking Some Time Off

Due to an un-welcomed souvenir I brought back with me from South Africa, I need to take a couple of weeks off and get healed up.

Upside Down Pizza



Upside-Down Pizza

1 1/2 pounds lean ground beef
2 (8 ounce) cans tomato sauce with basil, garlic, and oregano
1 (8 ounce) package shredded mozzarella cheese
1 (10 biscuits) package Texas Style refrigerated biscuits

Preheat oven to 400 degrees.  In a large skillet, cook ground beef over medium heat until brown.  Drain off grease.  Stir in tomato sauce; heat through.  Transfer beef mixture to a 2-quart rectangular baking dish or 10 inch deep-dish pie plate.  Sprinkle with cheese.   Arrange the biscuits on top of cheese.  Bake, uncovered, about 15 minutes or until biscuits are golden.  Makes 10 small or 5 large servings.

This is one of the first recipes I posted on my blog.  And just like all recipes, I am always making changes.  Some times new products will come out or I just want to try something new.  A small change can make a big difference.  For these changes I used larger biscuits and switched the tomato sauce.  The old recipe was good, but this one is even better.

Cape Town, South Africa Part 2


I love the fresh seafood in South Africa!  Not only is it as fresh as it can be, it is also very inexpensive and the serving size is HUGE.


We didn't just eat our weight in seafood, we took a day off from the meetings we were attending there and took a trip out to Robben Island. 

The tour started off with a boat ride out to the island.

Then we took a bus ride around the island.

The tour of the prison was lead by an ex political prisoner.  

The recipe card I am holding shows two different types of meals the prisoners were served.

This is the gate that Nelson Mandela walked to his freedom through.   


It was an incredible trip and I love South Africa, but there is no place like home!

After Work Swiss Steak


1 (16 ounce) bag baby carrot
4 medium potatoes, cut into 2 inch pieces
1 (14.5 ounce) can diced tomatoes with basil, garlic and oregano, undrained
1 (12 ounce) jar beef gravy
2 to 3 pounds round steak, browned, cut into serving sized pieces

In slow cooker, place carrots and potatoes.  Pour tomatoes and gravy over top.  Arrange steak on top.  Cover with lid. Cook on low 8 to 10 hours.

I love to use my slow cooker in the summer.  There is nothing like coming home and opening the door to be welcomed by the delicious aroma of a home cooked meal, without heating up the kitchen.
