Slow Cooker Green Chile Chicken Pasta


Slow Cooker Green Chile Chicken Pasta

3 to 4 skinless, boneless chicken breast, cut into bite size pieces
1 (16 ounce) jar Alfredo sauce
1 (7 ounce) can diced green chile, drained

In slow cooker sprayed with cooking spray, combine all ingredients.  


Mix well.   


Cover.  Cook on low 7 to 8 hours.  Serve over spaghetti or your favorite pasta.


We are big fans of the green chile.  New Mexico is home to the world famous Hatch Green Chile. 


At the end of summer, the air in our town is filled with the delicious aroma of chiles roasting.

  

This recipe is packed with flavor.  Green Chile has all the flavor of chile without the heat.  If you like heat, add a hotter green chile or add chopped jalapeno pepper.

Cranberry Turkey Casserole


Cranberry Turkey or Chicken Casserole

4 cups cooked  bow-tie pasta
2 cups cooked diced turkey or chicken
2 (15 ounce) jars Alfredo sauce
1 cup dried cranberries, plus extra for garnish
2/3 cup pine nuts or slivered almonds, plus extra for garnish

Preheat oven to 350 degrees.  In a baking dish, combine all ingredients. Salt and pepper to taste.  Mix well.  Bake 30 minutes or until heated through. Garnish with dried cranberries and pine nuts or slivered almonds.


My friend, Deana, entered this recipe in one of my contests at the Iowa State Fair.  When I saw the cranberries, I knew it would be perfect for an after Thanksgiving recipe.  Deana used chicken in her original recipe; I changed it to turkey.


I love Thanksgiving leftovers, but after a couple of meals of the same thing, it is time to change it up.  Cranberry Turkey Casserole, is a delicious way to do that.  The cranberries add a sweet contrast to the savory ingredients in the recipe.

Meatloaf Florentine

Meatloaf Florentine
Slow Cooker

2 eggs
1 (16 ounce) jar Parmesan Alfredo sauce, divided
3 slices bread, finely diced
1 (9 ounce) package frozen chopped spinach, thawed, squeezed dry
1½ pounds lean ground beef
garlic salt and pepper to taste

In large bowl, combine eggs and ½ cup Alfredo sauce. Mix well. Add bread and spinach. Mix well. Add ground beef, garlic salt and pepper to taste. Gently mix. 
In bottom of slow cooker sprayed with non-stick cooking spray, shape meat mixture into a loaf, mounded so it does not touch the sides. Cover. Cook on high 4 to 5 hours or low 8 to 9 hours. Remove from slow cooker. Heat remaining Alfredo sauce. Serve sauce with meatloaf. Makes 5 to 6 servings.

I
f you have not used your slow cooker to make a meatloaf before you should give it a try.  A big complaint that people have about meatloaf is that it is dry.  If you make it in the slow cooker, it will the moist and tender every time you make it.

This recipe is a new twist on a good old comfort food standby.  The creamy Alfredo sauce is a nice change from the usual ketchup topped meatloaf. 
My husband Stan is not a big cooked spinach fan, so when I first made this recipe he only took a small slice.  After his first bite he went back for seconds and probably would have gone back for thirds if our foreign exchange girls hadn't clean it out.
