Sickly Sensation Juice

Serving: 1 glass
RAW VEGAN

The Sickly Sensation Juice is a more creative name for the traditional Apple, Carrot, Ginger juice!  I call it the "Sickly Sensation Juice" because this is the best juice to drink when you are feeling under the weather! This juice will boost your immune system to help fight whatever your body is at war with!  Enjoy!

Ingredients:
1 Juicer
2 Apples
2 Carrots
1' slice Ginger Root
1' slice Lemon

Instructions:
1.) Juice the apples, carrots, and ginger root.  I suggest putting the ginger root in between juicing the apples and carrots so it mixes well!  Then add the lemon very last, because the lemon will help keep your juicer nice and clean! =)

2.) Pour and enjoy!  This is one of my favored recipes and one I use almost on a daily basis!  Below you can see how serious our family gets with this recipe, our Vitamin D content is flourishing thanks to this great deal on juicing carrots that my brother found at Kroger when we were in Franklin, Tennessee! =)

Baked Stuffed Pork Chop Casserole


1 (6 ounce) box Stuffing mix, plus the ingredients to prepare
1 apple, chopped
4 thick cut pork chops

Preheat oven to 350 degrees.  Prepare stuffing mix according to package directions.  Add chopped apple.  Mix well.


Cut a pocket in each pork chop. Stuff with stuffing mixture.  Secure with toothpicks.  


In a 13x9 inch baking dish that has been lightly sprayed with cooking spray, arrange pork chops.  Spoon remaining stuffing mixture around pork chops.


Cover with aluminum foil and bake 1 hour.  Uncover and bake an additional 15 minutes.


This recipe was inspired by one I read in the Alcatraz Cookbook.  When we were in San Francisco for Christmas, we toured Alcatraz.  You have to walk through the gift shop to leave the tour.  I bought the cookbook without really looking at it and I am really glad I did.

 
To counter the isolation of living on Alcatraz, they created social clubs.  The wives of the prison guards made up the Alcatraz Women's Club and collected recipes for the cookbook.  First printed in 1952 it features recipes that were popular at that time.

Apples & Angel Hair Pasta



Apples & Angel Hair Pasta

1 (1 pound) box angel hair pasta
2/3 cup olive oil
4 cloves garlic, minced
2 large apples, peeled, cored, diced
1 large tomato, seeded, diced
1/4 cup chopped fresh basil





Prepare pasta according to package directions.  Drain and place back in the pot it was  boiled in.  In medium skillet, saute garlic in olive oil over medium heat until golden brown.


Combine all ingredients. Salt to taste. Mix well.  


Serve with fish or chicken.


When I had this meal in Cape Town, South Africa, I knew I was going to recreate it when I got back home.  I love the fresh simple flavors in this dish.  The diced apple is the star of this recipe.  It's sweet and crisp texture is an unexpected surprise.

Fruit & Nut Yogurt Parfait

Fruit & Nut Yogurt Parfait 

1 (2 ounce) package chopped walnuts
1/2 tablespoon butter
1 tablespoon sugar
1 1/2 cups vanilla yogurt
1 apple, chopped
1/2 cup sliced in half grapes


In small skillet, saute walnuts, butter, and sugar over medium heat 2 minutes.  


Spread on parchment paper.  Cool.  


In two glasses, layer equal amount of ingredients.   Makes 2 servings.




One of my guilty pleasures is the Fruit and Walnut Snack at Mc Donald's.  I just love the combination of fresh apples and grapes, with yogurt and sugared walnuts.  This recipe allows me to have it anytime I am craving it, without having to make a run to the golden arches.
