Tip For Keeping Your Pumpkin From Getting Mushy

My sister Shelley asked me to re post this tip and since she is doing the recipe on Friday I thought it might be a good idea to keep her happy. 

It is time to carve pumpkins at our house.  The pumpkin always starts out looking great.  Well, if not great, at least the kids like them.

After a couple of days, they start to get soft and mushy.  That happens when air comes in contact with the cleaned out, inside flesh of the pumpkin, allowing bacteria to grow.  To slow that process down, I spray the inside of my hallowed out pumpkins with first aid antiseptic spray.


The spray keeps my pumpkin looking fresh for several extra days.  


Don't eat your pumpkin after it has been treated with the antiseptic spray

Chicken & Stuffing Casserole

2 (6 ounce) boxes low sodium stuffing, prepared according to package direction
1 pound cooked chicken, shredded
2 (10 3/4 ounce) cans low sodium Cream of Chicken soup
2 (6 ounce) containers Greek yogurt

Preheat oven to 350 degrees.  In 1 1/2 to 2 quart baking dish sprayed with cooking spray, layer 1/2 of the stuffing mix.


Arrange chicken over top.  


 

 Spread soup over top.  


Spread yogurt over soup. 




 Sprinkle remaining stuffing over top.  



Bake 45 minutes or until stuffing is golden brown.


 I think every kid who grew up in the Midwest, ate a version of this dish.  When my Mom would make this for us, she used regular yogurt not the Greek yogurt.  I like the tang that the Greek yogurt adds.

This tastes like a Thanksgiving meal in one dish.  I even like to serve it with cranberry sauce.  You could make it with turkey and your leftover stuffing from you Thanksgiving meal.

Pumpkin Oatmeal

1/2 cup milk
1/3 cup pumpkin pie mix
1/2 cup oatmeal
  
In cereal bowl, combine milk and pumpkin pie mix.  Mix well.  

Add oatmeal.  Mix well.  Microwave 2 minutes.  

Add additional milk and sugar if desired.  Makes 1 serving.

 

This recipe has a delicious hint of pumpkin flavor and is rich and creamy.  My husband is not a big pumpkin fan, so when I want pumpkin oatmeal I have to make a single serving. 

I like to garnish it with dried cranberries and chopped pecans.  I sometimes just add a little extra cinnamon and brown sugar.  It is a good basic recipe that you can adapt to your preferences. Add a little extra spice if you like.  Whatever makes you happy!

Creamy Potato and Bacon Soup

4 medium potatoes, peeled and cubed
1 cup chopped onions
10 slices bacon, cooked and crumbled
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1 1/2 cups milk
In a large saucepan, place potatoes, onions, and bacon.

Cover with water.  Bring to a boil.  
Reduce heat to a simmer.  Simmer 15 to 20 minutes.  

Stir in soup and sour cream.  Add milk and salt and pepper to taste.  
Simmer for 5 minutes.


This recipe is from my Mom's cookbook
 "Get Me Out of the Kitchen!"  


It is my Cousin Lisa and her family and my Aunt Pat and Uncle Bob's favorite potato soup recipe.  It has bacon in it, so of course my husband Stan loves it too!
