Recipe: Pumpkin Pancakes

Pumpkin Pancakes

1 cup complete pancake mix, just add water
1 cup water
1/3 cup canned pumpkin pie mix

In medium bowl, combine all ingredients.  Stir until batter is slightly lumpy.  In lightly greased skillet, pour 1/4 cup batter.  Cook until bubbles appear on top of pancake and bottom of pancake is golden brown. Turn pancake over and cook until golden brown.  Makes 6 to 7 pancakes.

I hate to toss out unused ingredients, so when I found myself with leftover pumpkin pie mix, I knew just what I was going to do with it.  Bo, from Bo's Bowl, recently posted a pumpkin waffle recipe, and I fell in love with the idea.  I have to confess, that I do not own a waffle iron, so I decided to make pancakes.  It took a couple of batches to get the consistency and taste that I wanted, but in the end, my family loved the pancakes.

I know, it is the second Tuesday that I posted a recipe instead of a tip again, but I went a little crazy with the pumpkin recipes this year, and I have a bunch of them in draft waiting to be posted on my blog.  I decided since it is the last day of November, I would slip one more pumpkin recipe in on you, the other recipes will have to wait until nest year.

  6. Just wanted to tell you that I did make the 'No-Cook Pumpkin Pie," and it was easy and delicious. Very light and extremly smooth. One that I will certainly use again and recommend.

  11. Love this! I do it all the time with plain canned pumpkin and add in the spices, etc only because I usually have it on hand. I could eat pumpkin pancakes winter, spring, summer and fall!
