Grilled Potato Packets

Grilled Potato Packets

2 large potatoes, sliced
1/2 medium onion, diced
1/2 red pepper, diced
1/2 teaspoon Cajun seasoning, divided
3 tablespoons butter, divided

Spray 2 sheets of aluminum foil with non-stick cooking spray.

Divide the potatoes, onion, and red pepper evenly on the aluminum foil.  Sprinkle 1/4 teaspoon Cajun seasoning over top.  Slice butter.  Place 1 1/2 tablespoons butter on top of potato mixture.

Close foil around ingredients.  Grill over medium high heat, 5 minutes on both sides.  Remove to top rack of grill for 5 minutes on each side.  Grills vary, so cooking times are approximates.

Be careful when you open the packets; the steam can burn you.  Makes 3 to 4 servings.

When it is hot outside, cooking in a slow cooker or on a grill are my preferred methods.  You get delicious food without heating up the house.

I love grilling because my husband does most of the work.  I just do the prep, then sit back and watch him play with fire.

Turkey on Biscuits

Turkey on Biscuits
My version of Stephen's recipe.

1/2 cup sliced mushrooms
1/3 cup chopped onion
3 tablespoons butter
2 cloves garlic, minced
2 cups chopped cooked turkey
3 cups chicken stock
1 cup frozen peas
3 tablespoons cornstarch
refrigerated biscuits

In large skillet, saute mushrooms and onions in butter over medium high heat until onions are translucent.

Add garlic.  Saute until lightly golden brown.

Add turkey, chicken stock, and peas.  Bring to a boil.  Reduce heat to medium low.

In small bowl, combine cornstarch and 1/3 cup cold water. Mix well.  Cook until thickened. Salt and pepper to taste.

My friend Stephen, aka The Obsessive Chef, has published his cookbook, A Cook's Books for Cooks.  I am one of the lucky bloggers who received a copy of his book to use for a giveaway.  The cookbook is so full of delicious recipes, it made finding just one to make for this post a difficult task.

I finally decided on his, Chick on Biscuits, recipe.  At the urging of, Stephen, I change the recipe to fit my family.  My husband loves biscuits and gravy, and this recipe is a nice change from the traditional biscuits and gravy recipe that I make with the leftover Thanksgiving turkey.

Below is Stephen's original recipe.

Chick on Biscuits
By Stephen Crout

This is kind of retro – back to what I was served many a time after getting home
from Sunday school and church.

2 cups of shredded cooked chicken
3 cups chicken broth (it can be from you poaching bird parts)
½ can of garbanzo beans, drained and rinsed (optional – I had them in the fridge)
½ onion roughly chopped
2 cloves of garlic minced
2/3 package of frozen peas and pearl onions partially thawed
3 Tbs butter (divided 2/1)
2 Tbs cornstarch dissolved in water
Chopped flat leaf parsley or cilantro
Salt and pepper to taste
Your favorite refrigerator biscuits from the supermarket

Bake the biscuits according to package directions.
Begin by bringing the broth to a simmer and reducing it by perhaps 1/3. The best
way to decide how far to go with the reduction is to taste it. You’ll know when it’s
ready. But don’t add any salt until the reduction is complete.

In a pot big enough to add all the ingredients and still be able to stir it easily melt 2
Tbs of the butter. At this point you will add some of the cornstarch mixture. It will
change the thickness of the liquid very quickly, so add only what you need. You
have to decide for yourself when it’s thick enough.

Add some salt and black pepper (keep tasting along the way) and dissolve the
remaining Tbs of butter in it.

While all this has been going on you can have been partially cooking the peas and
onions in the microwave. Mostly you just want to get it thawed and warmed up a
bit. It needs very little cooking. Add the garbanzos, peas and onions, chicken (and
anything else you’ve got that sounds good) to the gravy mixture and get it all
thoroughly hot.

Give it a final taste test, spoon the mixture over halved biscuits in heated wide
bowls, drizzle with a bit of olive oil, garnish with some chopped parsley or
cilantro and serve.

This tastes so 50's! I think I'm leaning toward being a retro cook. Now if I can only
find a place to buy retros.

Lynn's Rockin' Roast

Lynn's Rockin' Roast

3 1/2 to 4 1/2 pound roast
1 (10 3/4 ounce) can cream of mushroom soup
1 (1 ounce) packet dry onion soup mix
1 1/2 cups (12 ounce can) cherry cola or regular cola
1 onion, sliced thick

Spray slow cooker with non-stick cooking spray.  Place roast in slow cooker.  In medium bowl, combine mushroom soup, onion soup mix, and cherry cola.  Mix well.

Pour soup mixture over roast.  Pepper to taste.

Arrange onion over top.  Cover with lid.

Cook on low 8 to 10 hours.

This recipe came from a listener of my "Fast Food Friday" show on the Passion Radio Network.  Lynn, email me 9 delicious recipes.  My husband loves roast, so I picked her "Lynn's Rockin' Roast" to prepare first.  All of Lynn's delectable recipes are posted under the "Share Your Recipes" tab.

Lynn said, she always uses Cherry Coke when she makes this recipe, so that is what I did.  Not only was this roast super easy to prepare, but the Cherry Coke added an interesting twist.  It was a huge hit at my house!  The cola made the roast so tender you could cut it with a fork and the onion gravy was a savory delight.

Lynn, my husband Stan says, "Your roast really is rockin'!"  And he wants to know what can you do with a chicken?

Slow Cooker Hawaiian BBQ Sandwiches

Slow Cooker Hawaiian BBQ Sandwiches

4 to 5 pounds beef chuck roast or pork roast
2 tablespoons vegetable oil
1 small onion, sliced
1 cup crushed pineapple, drained
1 1/2 cups barbecue sauce, divided

In large skillet, add oil.  Add roast to skillet, brown all sides over medium high heat.

Spray the inside of the slow cooker with cooking spray for easy clean up.  Place the roast in the slow cooker.  Arrange onion and pineapple over roast.

Pour 1 cup of barbecue sauce over top.  Cover with a lid.  Cook on low 6 to 8 hours.

Remove roast to a cutting board or plate.  Using 2 forks, shredded the roast.

Place shredded meat in a large bowl.  Using a slotted spoon, remove onions and pineapple from slow cooker, place it in the bowl with the meat.  Add 1 cup of liquid from the slow cooker.  Add 1/2 cup barbecue sauce.  Mix well.

Serve on buns.  Makes 6 to 8 servings.

I love to use my slow cooker all year long.  There is nothing like coming home to the delicious aroma of a homemade meal, ready and waiting for you.

Barbecue sandwiches are one of my favorite meals.  But finding a good one can be difficult.  They either have too much barbecue sauce mixed in with the meat, or it has a dollop of sauce spread on top of dried out meat.  With this recipe, the meat is tender and juicy, and each bite has the perfect amount of barbecue sauce.

On Tuesday, we had a fundraiser at Passion Radio. I made the Hawaiian BBQ sandwiches, and they were a big hit!

Our good friend Bill Scott came in to help with the fundraiser.  Bill is not only an incredible fundraiser, he is also an author.  His new book "The Day Satan Called" is due out in October.  This book is generating a lot of buzz in publishing circles.  Nightline is interested in interviewing Bill, and there may soon be a movie deal.  You can download a free chapter of the book at his Facebook page.

Mom's Bean Salad

 Mom's Bean Salad

2 (15 ounce) dark red kidney beans, drained, do not rinse
4 hard boiled eggs, chopped
1/2 cup Miracle Whip
1/3 cup chopped onion
1/4 cup sweet pickle relish
1 teaspoon sugar

In large bowl, combine all ingredients. Mix well. Cover. Refrigerate 2 hours or overnight before serving.

Why is it that when your Mom make your favorite recipe, it is always better than you can make it yourself?  This bean salad recipe is one of my favorites!  My Mom will only make it when I am home.  It doesn't matter how much my sister Shelley begs and pleads for this dish, my Mom refuses to make it until I am there.

Have you ever put eggs in a pan of water on the stove to boil, then got busy and forgot you did it?  I am sad to say I have, and unfortunate I have done it more than once.  Luckily for me, my Mom purchased me an egg cooker, and saved me from potentially burning down my house with my forgetfulness.

Have you ever put something on the stove
and forgot about it, or is it just me?

Recipe: Mediterranean Salsa

Mediterranean Salsa

3 tablespoons olive oil
1/4 cup fine chopped onion
4 cloves garlic, minced
4 tomatoes, seeded, chopped
24 green olives, chopped fine
2 Anaheim Chiles, seeded and chopped fine
1 1/2 tablespoons red wine vinegar
1/2 teaspoon Cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt

In large saucepan over medium heat, saute onion and garlic in olive oil until lightly browned.  Add remaining ingredients and bring to a boil.  Reduce heat to low.  Simmer 5 minutes.

This recipe has a unique blend of flavors and the perfect amount of heat.  It is from the first cookbook I wrote, MILD TO WILD MEXICAN COOKBOOK.  The recipe was a last minute addition.  The designer called me, saying she needed one more salsa recipe to complete the Appetizer section of the book.

I had already put all of my salsa recipes in the cookbook, so I had to create a new one.  As I opened my cabinet, I was praying for inspiration.  The first thing  that caught my eye, was a jar of green olives.  I immediately thought back to a conversation I'd had earlier in the day with Fareed, the owner of my favorite radio station, Passion Radio, where I do my "Fast Food Friday" segment.  We had discussed how much we both loved Mediterranean food, so when I saw the green olives, I knew I had to make a salsa with them in it. It only took two batches of salsa to get the desired blend of flavors.

My husband loves this recipe, so It is probably the one recipe that I make the most.  When I am creating a recipe, and I get it just the way I want it, I will seldom make it again.  I have to keep coming up with new recipes, because I am always working on a new cookbook, and you can't do that if you keep making the same recipe over and over again.

MILD TO WILD MEXICAN COOKBOOK, will soon be republished by my current publisher.

South African Recipe: Bobotie

One of my favorite things about traveling is trying new foods.  Bobotie is a recipe I have every time I travel to South Africa.  I just love it!  Bobotie has a slightly sweet taste with a light curry flavor and an egg topping.  In 1954, Bobotie was declared the National Dish of South Africa by the United Nations Women's Organization.

Everywhere I travel, I try to purchase a cookbook with the local recipes in them.  Then I can relive the trip through the smells and tastes of their dishes.  The Bobotie recipe I am sharing, did not come from a cookbook but from a friend who was kind enough to prepare the dish for us then give me her family recipe.

This recipe has more ingredients than I typically use, but it is still simple and easy to make.

Bobotie

1 small onion, chopped
2 tablespoons vegetable oil
2 1/2 pounds lean ground beef
1 teaspoon crushed garlic
1 teaspoon turmeric
1 to 2 teaspoons curry powder
6 slices white bread, soaked in milk
2 teaspoons lemon juice
1/4 cup packed brown sugar

Topping

2 eggs, beaten
pinch of salt
4 bay leaves

Preheat oven to 350 degrees.  In large skillet, saute onion in vegetable oil over medium high heat until softened.  Add ground beef.  Cook until browned.  Add garlic, turmeric, curry powder (add a little at a time, tasting as you go, until you achieve the desired flavor), and salt to taste. Add bread, lemon juice, and brown sugar.  Mix well.  Cook until heated through.  Pour into a 2 quart casserole dish. In small bowl, beat together egg and pinch of salt.  Pour over top of meat mixture.  Arrange bay leaves on top. Bake 10 minutes or until the egg is set and top is slightly browned.

On Tuesday, I will post more pictures from my trip to South Africa.
