Prize Winning Dessert Recipes


First Place Winner: Over Easy Creme Caramel 

1 cup Eggbeaters
2/3 cup sugar
2 cups fat free milk or Half and Half
1 cup skim milk
1 tablespoons vanilla
6 to 8 tablespoons caramel syrup

Preheat oven to 350 degrees.  In large bowl, combine Eggbeaters and sugar.  Mix well with an electric mixer.  In small saucepan, combine fat free (or Half and Half) and skim milk, heat on low until warm.  Add to Eggbeater mixture.  Mix well using the electric mixer.  Add vanilla.  Mix well.  Pour into 6 to 8 custard cups with 1 tablespoon of caramel sauce in the bottom.  Set filled custard cups in a 13x9 inch baking pan filled with very hot water.  Bake 45 to 60 minutes or until a knife inserted comes out clean. 


Second Place Winner: White Chocolate Peanut Butter Cookie Bars


1 (24 ounce) package vanilla flavored almond bark
1 1/4 cup crunchy peanut butter
1 cup semi sweet chocolate chips
14 Nabisco Nutter Butter Peanut Butter sandwich cookies, crushed fine

Line a 11 1/2 x 7 3/4 sheet pan with parchment paper, allowing 1 inch to extend over the edge.  Microwave almond bark until melted, stirring after each minute.  Add peanut butter. Mix well.  Pour into sheet pan, spreading to cover bottom of pan.  Microwave chocolate chips until melted, stirring after every 30 seconds.  Drizzle over peanut butter layer.  Using a knife, swirl chocolate into peanut butter. Sprinkle crushed cookie over top.  Press firmly into bark.  Place pan in freezer for 15 minutes.  Cut into 36 bars.


Third Place Winner: Apple Cider Cheesecake

1 (9 inch) shortbread pie crust
1 (20 ounce) can apple pie filling
12 ounces cream cheese, softened
6 packets instant apple cider mix
1 (8 ounce) container whipped topping

In large bowl, beat cream cheese until light and fluffy.  Add cider mix. Mix well. Add whipped topping. Mix well.  Pour into pie crust.  Top with apple pie filling.  Refrigerate until time to serve.  All ingredients were purchased at Fairway grocery store.

It is really hard to judge a cooking contest!  Almost everything you try is delicious.  There was only one dish that I judged that I wanted to spit out.  If I hadn't been setting in front of an audience, I would have.  Instead I swallowed quickly, and followed it with several gulps of water, in an attempt to rid my mouth of the flavor.

These prize winning recipes will have you going back for seconds, not reaching for the water.  When I received the recipes, they did not have the winners names printed on them.  I know the third place winner, but to be fair to the other two, I will leave her name off too. 

The Apple Cider Cheesecake, is a perfect dessert to add to your Thanksgiving menu.

  4. Hi Linda. Just a quick question. I was salivating over the prize recipes but was puzzled when the Over Easy Creme Caramel called for both fat-free milk and skim milk which are the same identical product. I worked for the dairy industry as a nutritionist for 10 years, so trust me on this one. I would like to try the recipe but wonder if you could clarify this for me.

    1. Thanks for the question! You are correct, fat free and skim milk are the same. The recipe is written by the person who entered it in the contest. When I post the winning recipes I post them as they were written. I thinks she wrote the recipe that way so you could swap part of the milk for half and half. It is so easy to make a mistake when you write a recipe. I hope that answered your question.
