Cape Town, South Africa

We just returned from a trip to South Africa.  It is one of my favorite places to visit.  The over 17 hour plane ride to get there is worth it.  The scenery is beautiful, the people friendly, and the food is incredible!
 The airplane food was really good!  For breakfast we had an omelet with tomato sauce, sausage and mushrooms with fresh fruit, yoghurt, croissant, and tea.

We went to Cape Town for a three day Passion Play Ministries International summit meeting.

Our son Tyler and his girlfriend Jordan (Gingerlocks' Kitchen) went along on the trip with us.  Tyler is the PPMI webmaster and Jordan is the editor for a new magazine that PPMI will be publishing.


We stayed at our friends Kevin and Sue Robb's house again.  I usually prefer to stay at a hotel when we travel, but I would rather stay at the Robb's house than any 5 Star hotel that is out there.  They are fabulous hosts and we always look forward to spending time with them.

While we were in South Africa, Tyler asked Jordan to marry him at the light house on Cape Point.  We are so excited to have Jordan as part of our family!

Cajun Rub Chicken



2 tablespoons paprika
2 tablespoons brown sugar
1 tablespoon Cajun seasoning
1 ½ to 2 pounds chicken strips

In small bowl, combine paprika, brown sugar, and Cajun seasoning.  Mix well.   

Rub seasoning blend onto all sides of chicken.   

Grill over medium heat for 4 to 6 on each side or until chicken is cooked through.

This is our favorite rub recipe.  Lots of flavor with just a hint of heat.  It also works great on pork and beef.

Spaghetti Salad



1 (16 ounce) package spaghetti
1 cucumber
1 red onion
1 green pepper
1 (12 to 16 ounce) package cherry or grape tomatoes
1 ½ to 2 cups Zesty Italian salad dressing

Prepare spaghetti according to package directions.  Chop cucumber, red onion, and green pepper into bite sized pieces.  




In large bowl, combine all ingredients.  Mix well.  Refrigerate at least 1 hour before serving.   


I like to make it the day before so the flavors have plenty of time to blend.

Growing up it seemed that every picnic or dinner we attended during the summer had some form of this recipe there.  You can add pepperoni, salami, cheese, celery, or other vegetables to this simple and delicious salad.

No-Bake Cookies



2 cups sugar
½ cup butter
½ cup milk
½ cup peanut butter
3 tablespoons cocoa powder
½ teaspoon vanilla
3 cups oatmeal

In large saucepan over medium high heat, combine sugar, butter, and milk.  Heat until boiling and then boil 30 seconds to one minute.  Remove from heat.   

Add peanut butter, cocoa, and vanilla.  Mix well. 


 
Add oatmeal.  Mix well.   


Drop by tablespoon onto waxed paper.  Cool.


When it is too hot outside to heat up your kitchen baking cookies, this is the recipe I make.  When I got married, one of my friends gave me a recipe book with several of her favorite recipes in it and this is one of them.  


  It is a wedding gift that I continue to treasure and think of her every time I use it.

Grilled Lemon Asparagus



 
1 bunch asparagus
½ cup olive oil
1 lemon
1 teaspoon steak seasoning

In a large Ziploc plastic bag, add asparagus and olive oil.  Squeeze the juice from the lemon into the plastic bag.  



Slice the squeezed lemon and add it to the plastic bag.  Add steak seasoning.  Close bag and shack to mix.  Refrigerate at least 1 hour before grilling.    


Grill over medium high heat until grill marks appear.

I love grilled vegetables!  I think grilling takes something ordinary and makes it special.  Suddenly the ho hum veggies become a yummy treat full of delicious flavors that you can only get when they are grilled.
