Orange Twist Cake

Orange Twist Cake

2 (15 ounce) cans mandarin oranges
1 (18.25 ounce) box French vanilla cake mix
3 eggs
1/3 cup vegetable oil

Preheat oven to 350 degrees.  In large bowl, pour 1 can mandarin oranges with juice. Drain remaining can of oranges, add to bowl. Add cake mix, eggs, and oil.  Mix well.  Pour batter into greased 13x9 inch baking pan.  Bake 35 to 40 minutes. Cool. Frost with cream cheese frosting or whipped topping.

This cake is what we are having for dessert on Easter.  It is moist and has a very light orange flavor.


Have you ever thought about quitting blogging?   I hadn't until this last week.  This is my favorite time of the year, and my busiest time of the year.  Aside from being busy, I had some really disappointing news delivered this week.  So feeling discouraged and overwhelmed, I considered quitting.

Just when I was getting serious about giving up the blog, I went to my friend Bo's blog.  On Bo's Bowl, he had made and posted my Pretzel Toffee recipe, and just like that, the little cloud of sadness that had been hanging over me every since I received the bad news, seemed to lift.

Bo's kind words were just the encouragement I needed.  Is there someone you know who needs a few kind words?  I know I was praying for something to happen to make me feel better, and I am sure if we all look around we will find people who need a little encouragement too!

  4. That cake looks delicious and so easy! We spend Easter on the beach, so this cake would be perfect for a sunny, outdoor meal. I love "summery" cakes.

  8. So glad you have not given up the blog but I understand especially at the moment while I am so busy and so little time. Nigel has arrived, but I have not seen the recipe books yet. He arrived, put his head down and is now fast asleep. I will let you know later about the books but thanks anyway. This recipe looks so simple and sounds delicious.     I bet those mandarin oranges keep that cake so moist. I doctor up cake mixes all the time...Sorry to hear you got some bad news...but don't you even think about quitting blogging...I have almost given up so many times...and you have always been such an encourager to me. I'm so thankful I have got to connect with you through blogging.

  17. I have a recipe like this called tropical fruitcake and it uses crushed pineapple and mandarin oranges with a whipped cream and pudding frosting. I make it in a bundt pan.

    I've been there too about the blog. I hope whatever it is that's bugging you goes away. For me, I was flamed badly by an anonymous reader for something I didn't realize was so controversial... I ended up deleting the post altogether and I had so much support from my regulars that it made it all better.

  27. Please, don't give up blogging. You may not have a clue how many of us love what you are doing. Take a break, if you need it but don't leave.

    This cake and the easy way it is made is a reason for not leaving. I now have a beautiful cake that is easy to make and sounds delicious.
