1, 2, 3, 4, Cookies



1 cup peanut butter
1 ½ cup sugar, divided
1 egg
1 (12 ounce) package Hersey Kisses®

Preheat oven to 350 degrees.  
 In medium bowl, combine peanut butter, 1 cup sugar, and egg.  


 Mix well.

  
 Form into 1 inch balls.  Roll in ½ cup sugar.
  
 Place on ungreased cookie sheet.  Flatten cookies with bottom of drinking glass.
 
  
 Bake 9 minutes.  Press Kiss into each cookie before they cool.  Makes 18 cookies.
 
I have lots of leftover baking items that I had planned to use at Christmas time.  I don't want to stuff my cupboards with them, so I am using them up.  My husband loves these cookies, and is very happy with this plan.

Peanut Butter Truffles


Peanut Butter Truffles 

1 pound package Nutter Butter cookies
1 (8 ounce) package cream cheese, softened
1 (24 ounce) package chocolate bark



In food processor or blender, add cookies.  Don't over fill the processor or blender with cookies.  I processed the cookies in three batches.  They need room to move around as they are being crushed. 


Using the pulse button, process until cookies are crushed.  


In large bowl, whip cream cheese until light and fluffy.  


Combine cookie crumbs and cream cheese.  Mix well. 


Form into 1 inch balls, place on cookie sheet lined with parchment paper or wax paper. 


Refrigerate cookie balls at least 1 hour.  Melt chocolate bark in microwave for 1 minute, then in 30 second intervals until melted, stirring after each time it is heated.


Dip cookie balls in melted chocolate, place on parchment paper. Refrigerate.  


You can make this recipe using any flavor of sandwich cookie.  Oreo cookies are my husband's favorite.  You can also use vanilla bark instead of the chocolate bark.

Chocolate Peanut Butter Cake


Chocolate Peanut Butter Cake

1 box devil’s food cake mix
1 (16 ounce) sour cream
3 eggs
11 snack size Reese’s peanut butter cups
1/2 cup peanut butter
1/2 cup semi-sweet chocolate chips
2 teaspoons vegetable oil
2 tablespoons chopped peanuts

Lightly spray or oil 9 1/2 inch bundt pan.  Mix sour cream and eggs. Add to cake mix and mix until smooth. Place 12 scoops of batter into bundt pan and spread evenly.  Place peanut butter cups over batter in pan.  Top with remaining batter.  Microwave cake on high for 11-14 minutes until cake tester comes out clean.  Remove to cooling rack and let cool for 10 minutes. Loosen cake from sides of pan and turn onto platter.  Microwave peanut butter on high for 30 seconds or until melted. Pour over cake.  Melt chocolate chips and oil 20-40 seconds or until melted. Drizzle over cake and sprinkle with chopped peanuts.




This cake took Honorable Mention in a Chocolate Dessert contest at the Iowa State Fair.  My friend Darrellyn, hosted the contest and shared this delicious recipe with me.  I love the combination of chocolate and peanut butter, in this easy recipe.

Chocolate & Peanut Butter Candy

 Chocolate & Peanut Butter Candy

1 (1pound) package vanilla flavored Almond bark, broken into pieces
1/2 cup creamy peanut butter
1 (6 ounce) package semi-sweet chocolate chips


In a medium bowl, add vanilla bark.  Microwave on high 2 minutes. 


Add peanut butter to melted vanilla bark. 


Mix Well.


Spread on wax paper or parchment paper lined baking sheet.  


In another medium bowl, add chocolate chips.  Microwave on high 1 1/2 minutes.  


Pour melted chocolate over peanut butter mixture.  


With a butter knife, make swirls to combine slightly.  


Cool. Cut or break into pieces.


This is one of our favorite candies.  If you like Reese's Peanut Butter Cups, then you will love this recipe too.  It is also super quick to make.  From start to finish, it will only take you about five minutes.

This year when I went to buy my baking supplies, I noticed they had a different size vanilla flavored bark.  Instead of the one pound package, they now had a twenty four ounce package.  If you run into the same problem at your store, change the recipe to:

1 (24 ounce) package vanilla flavored almond bark, break into pieces
3/4 cup creamy peanut butter
1 1/2 cups semi sweet chocolate chips

Follow the instructions as listed above.

Pizza Nibblers

Pizza Nibblers

4 saltine crackers
2 teaspoons pizza sauce
3 tablespoons shredded mozzarella cheese
4 slices pepperoni


Place 4 crackers in a microwaveable plate.  Spread pizza sauce over crackers.

Sprinkle mozzarella cheese over pizza sauce.


Top with pepperoni.


Microwave for 30 seconds, or until cheese has melted.


This is my niece, Emily's, favorite after school snack.  She loves to cook, and this is an easy recipe for her to make by herself.

Kids are not the only ones who love Pizza Nibblers.  It tastes like a fresh baked slice of pizza.  The cracker turns into a thin crust for your choice of toppings.  It is a perfect snack for when you get a case of the munchies, and crave something quick and hardy.


My sister, Shelley, is very creative in the kitchen.  She loves to make meals special, so when I saw PBJ on a stick at the Iowa State Fair, I knew it was an idea she would love.



My niece, Miley, started preschool last week.  My sister made the peanut butter and jelly sandwich on a stick for her lunch after her first day of school.  Shelley, added sliced strawberries and bananas to the grapes and the sandwich to make it extra special for, Miley.
