Mocha Mousse

Mocha Mousse

1 teaspoon espresso powder
2 tablespoons hot water
1/2 cup Nutella
3 cups whipped topping

In small bowl, combine espresso powder and hot water. Stir until dissolved.  In large bowl, combine espresso powder mixture and Nutella. Mix well. Fold in whipped topping. Chill until ready to serve.


I had planned on posting the prize winning recipes from the contests that I judged this week, but I haven't received the recipes yet.  I should get them in the next couple of days so I will be able to post them next Friday.

My friend Darrellyn gave me this recipe to post instead of the ones I intended to.  She entered it into a contest and it was judged a 95 out 100 points.  Darrellyn is a fabulous cook!  She took first place and third place in the contests my Mom and I sponsor.
 

My new cookbook will be available at the Iowa State Fair, and soon it will be available at schools, businesses, hospitals, and book fairs in cities across the United States.  Be sure to pick up a copy or two, when you see them.  They make great gifts!

Slow Cooker Peach Dessert


Slow Cooker Peach Dessert

 2 (16 ounce) packages frozen peaches
1 (15.25 ounce) yellow cake mix
1 (12 ounce) can lemon lime soda
 Vanilla ice cream

In an oval 4 quart slow cooker, place peaches. 


Sprinkle dry cake mix over peaches. 


Pour soda over top. 


Cover. 


Cook on low 3 1/2 to 4 hours. Serve with vanilla ice cream. 


My friend Pam, of Pam's Midwest Kitchen Korner, featured a version of this recipe on her blog.  When I saw how simple it was, I just had to make it.

It has been really hot here in New Mexico, so I decided to make the dessert in a slow cooker.  When the weather cools off, I am going to make Pam's version.

The sweet warm peaches with the gooey cake and cold ice cream was a delicious combination that my husband loved.
