Slow Cooker Green Chile Corn

3 (15.25 ounce) cans corn, drained
1 (14.75 ounce) cream of corn
1 to 2 (4 ounce) cans diced green chile
1 (8 ounce) package cream cheese, room tempature

In slow cooker, sprayed with cooking spray, add corn, cream of corn, and green chile. Mix well. spoon dollops of cream cheese over top. Cover with the lid. Cook on low 4 to 5 hours.  Mix well before serving.

This easy slow cooker recipe is a hit at potlucks!  The cream texture and green chile make a people pleasing dish.

Slow Cooker Baked Potato

4 to 6 russet potatoes, washed and dried
2 tablespoons olive oil
Salt

Prick each potato several times with a fork.  Rub with oil and sprinkle with salt. 
 
 
Wrap in aluminum foil. Place in slow cooker. Cover with lid. 
 
Cook on low 7 to 8 hours.
 
 
 
This is my favorite way to make baked potatoes.  It is perfect for when the weather starts to heat up and you want to keep the kitchen cool.

Slow Cooker Broccoli Cheese Soup

1 (8 ounce) package shredded Velveeta cheese
2 (10 3/4 ounce) can cream of celery soup
1 (10 ounce) package frozen chopped broccoli
1 (12 ounce) can evaporated milk
1/2 cup water

In slow cooker, combine all ingredients.  Mix well.  


Cover. Cook on low 4 to 5 hours.  Makes 6 servings. 

This recipe took first place in one of the first cooking contests that we sponsored almost 10 years ago.  It is the perfect blend of creamy cheese and broccoli.  Instead of ordering it at a restaurant you can make it at home.

After Work Swiss Steak


1 (16 ounce) bag baby carrot
4 medium potatoes, cut into 2 inch pieces
1 (14.5 ounce) can diced tomatoes with basil, garlic and oregano, undrained
1 (12 ounce) jar beef gravy
2 to 3 pounds round steak, browned, cut into serving sized pieces

In slow cooker, place carrots and potatoes.  Pour tomatoes and gravy over top.  Arrange steak on top.  Cover with lid. Cook on low 8 to 10 hours.

I love to use my slow cooker in the summer.  There is nothing like coming home and opening the door to be welcomed by the delicious aroma of a home cooked meal, without heating up the kitchen.

Slow Cooker Simple Fruit Cobbler

2 (15 ounce) cans sliced pears, drained
1 (21 ounce) can blueberry pie filling
1 (15.2 ounce) box Cinnamon Streusel Muffin mix
5 tablespoons butter


Spray slow cooker with non stick cooking spray.  Add pears and blueberry pie filling.


Sprinkle dry muffin mix over top.  


Dot butter over dry muffin mix.


Cover with lid.  Cook on high 1 hour. 



Uncover.  Cook on high uncovered 1 hour.  Serve with ice cream if desired.



Pears and blueberry pie filling sounds like a strange combinations, but they go together like peanut butter and jelly.  By combining them, they make the other ingredient taste even better.  

This recipe is perfect for summertime.  You get a delicious cobbler without heating up the kitchen.  Serve it with ice cream and you have a dessert that everyone will love.

My husband and chief taste tester put together his choice for my Top 10 Recipes of 2012.  The man knows his food, and after all the recipes he has to tested for my cookbooks, it kind of makes him an expert.

Slow Cooker Posole

 
Posole

1 1/2 to 2 pounds thin boneless pork loin center cut chops
2 (10 ounce) cans enchilada sauce
1 (15.5 ounce) cans white hominy, drained
1 (7 ounce) can green chile
1 (32 ounce) box chicken broth
1/2 teaspoon cumin

Cut pork loin into bite size pieces. 


In large skillet with a small amount of oil, brown pork loin. 


In slow cooker, combine all ingredients.  


Mix well.  Cover.  


Cook on low 6 to 7 hours.


I live in New Mexico and there must be a law that says at every potluck someone must bring Posole.  Recently, I was chosen to provide the Posole for a potluck at our church.  I must confess, I was not their first choice.  The lady who usually makes the soup was out of town so the duty fell to me.  

I was really nervous about making this much loved soup!  I don't have time to make it the traditional way, with lots of ingredients and lots of time in the kitchen.  So I came up with this shortcut recipe.  I am happy to say everyone loved it! 

I used mild enchilada sauce.  If you like it very spicy, use medium or hot enchilada sauce.  I also like to serve sour cream on the side with the Posole.

Slow Cooker Peach Dessert


Slow Cooker Peach Dessert

 2 (16 ounce) packages frozen peaches
1 (15.25 ounce) yellow cake mix
1 (12 ounce) can lemon lime soda
 Vanilla ice cream

In an oval 4 quart slow cooker, place peaches. 


Sprinkle dry cake mix over peaches. 


Pour soda over top. 


Cover. 


Cook on low 3 1/2 to 4 hours. Serve with vanilla ice cream. 


My friend Pam, of Pam's Midwest Kitchen Korner, featured a version of this recipe on her blog.  When I saw how simple it was, I just had to make it.

It has been really hot here in New Mexico, so I decided to make the dessert in a slow cooker.  When the weather cools off, I am going to make Pam's version.

The sweet warm peaches with the gooey cake and cold ice cream was a delicious combination that my husband loved.
