Slow Cooker Rice Pudding

Slow Cooker Rice Pudding

4 cups instant rice (not cooked)
2 (14 ounce) cans sweetened condensed milk
1 ( 12 ounce) cans evaporated milk
1 1/2 to 2 teaspoon cinnamon

In slow cooker, combine all ingredients.  Add 2 1/2 cups water.

Mix well.

Cover with a lid. Cook on low 2 1/2 to 3 hours. Makes 8 to 10 servings.

Have you ever forgotten you loved a food, and were only reminded of it, when you had it again?  Well, that's what happened to me with Rice Pudding.  I went to a meeting and they served rice pudding.  I liked it so much, I had two servings!

This recipe has the same taste as that creamy, cinnamon infused, Rice Pudding, I had at that meeting.  Only with this recipe, you can toss it all together in the slow cooker, and walk away.  It doesn't get easier than that.

Slow Cooker Lava Cake

Slow Cooker Lava Cake

1 (18.25 ounce) box chocolate cake mix
2 1/4 cups water, divided
1/4 cup vegetable oil
1 1/2 cups sugar
1/2 cup cocoa powder

In large bowl, combine cake mix, 3/4 cup water, and 1/4 cup vegetable oil.  Mix well.  Spread in the bottom of a 4-quart slow cooker sprayed with cooking spray.

In medium bowl, combine sugar, cocoa powder, and 1 1/2 cups very hot water.  Mix well.

Pour mixture into slow cooker.  Cover with lid.  Cook on high 2 to 2 1/2 hours.  I cooked mine for 2 hours.

Turn off slow cooker.  Let cool 15 to 30 minutes to thicken up the sauce.

Serve warm with vanilla ice cream if desired.

This is a chocolate lovers dream dessert.  Rich warm moist chocolate cake rises to the top of the slow cooker as it cooks, with a layer of thick hot chocolate fudge sauce on the bottom.  It is an easy and delicious dessert.

I love to take a recipe with a lot of ingredients and figure out a way to make them with less ingredients, but still have the same flavor.  The original recipe that I had for a Lava Cake had 12 ingredients; my version of it has only five.
