Grilled Italian Sausage Sandwiches

1 pound bulk Italian Sausage, mild or hot
1 red pepper, sliced
1 small onion, sliced
4 teaspoons butter
3 sandwich buns

Shape sausage into three patties.  



On two pieces of aluminum foil, spray non stick cooking spray.  Divide the red pepper, onion, and butter onto the aluminum foil.




Close foil around vegetables.  


Grill Italian sausage and vegetable packets over medium high heat until sausage is cooked through.



On sandwich buns, place Italian sausage, red peppers, and onions.  

 


 Spread brown mustard on top bun if desired.  Makes 3 servings.


My husband and I grew up in Iowa.  There was a little hole in the wall restaurant that made this sandwich.  Why is it that the little local dumpy restaurants always have the best food?  The restaurant that made this sandwich became so popular, they decided to upgrade to a bigger and fancier place, but some how the food wasn't as good as the crowded little shack.

Italian Sausage Sandwiches


Italian Sausage Sandwiches

1 pound Italian sausage
2 hoagie buns
1/2 cup mild or hot banana pepper rings
1 cup shredded mozzarella cheese

Form Italian sausage to fit hoagie buns.  In large skillet, fry Italian sausage until cooked through.


Place hoagie buns under the broiler and toast until golden brown.  Remove from oven and place sausage patties on bottom part of the buns.


Arrange peppers over top of sausage patties.  


Sprinkle mozzarella cheese over top.  


Broil until cheese melts and is golden brown.  Makes 2 servings


This super simple sandwich is one of my husband's favorites.  The spicy sausage, with the sweet pickled pepper rings, and the melted mozzarella cheese, all on a toasted bun, is a combination my husband thinks can't be beat.  I have tried to talk him into making changes to the sandwich, but he has asked me not to "mess" with his sandwich, so I guess I will leave it just like it is.

Italian Potato Soup

Italian Potato Soup

5 medium potatoes, sliced thin
1/2 cup diced onion
1 1/4 pounds Italian sausage, formed into bite-sized pieces
2 1/2 teaspoons salt
1 1/2 teaspoons pepper
6 cups water
1/4 cup butter
2 cups milk

Slow Cooker Instructions:
In slow cooker, layer 1/2 of potatoes, onion, sausage, salt, and pepper.  Repeat layering.  Add water and butter.  Cover.  Cook on low 10 hours.  Add milk.  Mix well and serve.  Makes 6 to 8 servings.
Stove Top Instructions:
In stockpot, add potatoes, onion, and water. Bring to a boil, over medium high heat.  Reduce heat to medium low, cook 30 minutes.  Add sausage, salt, and pepper, and butter, cook 20 minutes, or until potatoes are tender. Add milk.

This is my husband's favorite soup!  Before we created this recipe, the only place we could have it was in a restaurant that was 3 hours away.  One night at the restaurant as we were playing our favorite game, "How is This Dish Made," my husband said, "I think I can make this!"  And we did!  After a little tweaking, the flavor was a perfect match for the restaurant version.

The soup is comfort food jazzed up a little.  The sausage makes this soup extra hearty and adds an extra layer of flavor to the soup.
