Baked Crab Rangoon

15 won ton wrappers
1 (8 ounce) package vegetable cream cheese, softened
1 (3.53 ounce) pouch crab, drained
1/4 cup sweet and sour sauce

Preheat oven to 350 degrees.  Lightly coat won ton wrappers with cooking spray.  Press won ton wrappers into mini muffin cups.  In small bowl, combine cream cheese and crab.  Mix well.  Spoon mixture into won ton wrappers.  Top with sweet and sour sauce.  Bake 8 to 10 minutes or until golden brown.
I love to go to a Chinese restaurant and order Crab Rangoon.  This baked version is so easy to make and has all the flavor my local restaurant has, but without the hassle of trying to fold them up and deep fry them.  When I have deep fried them in the past, the filling in some of the Rangoons would spill out, leaving me with empty won ton wrappers.  With this recipe, each one comes out perfect every time!

Spread mixture over bread cubes.  Sprinkle 1/2 of the shredded cheese over top.  In large bowl, combine spaghetti sauce and meatballs.  Mix well.  Arrange meatballs on top.  Sprinkle remaining shredded cheese over meatballs.  Bake 30 minutes or until cheese has melted.
This easy casserole was a hit with my family!  The cream cheese adds a lasagna like layer to it.  My nieces went back for seconds they like it so much.

This is one of the recipes we will be snacking on during the Super Bowl party we are having at my sister's house.  My sister Shelley loves to host parties!  She goes all out with the food and decorations.  But for me, this party is going to be all about the football game.  I love the Broncos and will be cheering them on while I enjoy good food and family time.

1/3 cup powdered sugar
1/4 cup mini chocolate chips

In medium mixing bowl, whip cream cheese until light and fluffy.  Add powdered sugar.  Mix well.

Fold in chocolate chips.

Pumpkin Pie Fruit Dip

Pumpkin Pie Fruit Dip

1 (16 ounce) cream cheese, softened
1 (7 ounce) marshmallow creme
1/2 cup pumpkin pie mix

In medium bowl, whip cream cheese until fluffy. Add remaining ingredients. Mix well.  Serve with fruit.

Our son Tyler and his girlfriend Jordan came home for the weekend.  We had a Banquet and Leadership Conference for Passion Play Ministries International and they came to help out.

Jordan has a blog called Gingerlocks' Kitchen.   Even though we were very busy that weekend, Jordan whipped up my new dip recipe in our church's kitchen while I took photos.  We had so much fun!  I can't wait to spend more time in the kitchen with Jordan!

Lemon Heaven Dessert

Lemon Heaven Dessert

1 (20 ounce) can lemon pie filling
2 (8 ounce) packages cream cheese, softened
1/4 cup confectioners' sugar
2 tablespoon lemon juice
1 pre-made angel food cake, cut into cubes

In large bowl, combine pie filling and cream cheese.  Mix well using an electric mixer.  Add confectioners' sugar and lemon juice.  Mix well.

Gently fold in the angel food cubes.  Refrigerate over night.

Our son Tyler's girlfriend Jordan, shared this recipe with me.

Jordan is a fellow foodie, and Tyler loves her cooking, so I knew it had to be good.

With just my husband Stan and I at home now, I typically wait for a potluck at church or some other event to make desserts.  Lucky for you and I, we had a potluck on Sunday.  I took both of the dessert recipes that, Jordan gave me.

The people at our church have been taste testing my recipes for years, and they know I value honest criticism.  When my pans are empty at the end of a potluck, and people are asking for the recipe, I know I have a winner.  That is what happened on Sunday.

Thanks Jordan, for sharing your delicious recipes!
