Bun Tip


The biggest grill day of the year is the 4th of July.  To make your burgers extra special this year toast the buns!  That is what restaurants do. 

Spread a light coating of butter on the insides of the bun. 


Over medium high heat, place the butter side down in your skillet, and cook until toasted.


With just a little effort, your burgers will go from good to great, and everyone will think you are the Grill King or Queen!

Grilled Italian Sausage Sandwiches

1 pound bulk Italian Sausage, mild or hot
1 red pepper, sliced
1 small onion, sliced
4 teaspoons butter
3 sandwich buns

Shape sausage into three patties.  



On two pieces of aluminum foil, spray non stick cooking spray.  Divide the red pepper, onion, and butter onto the aluminum foil.




Close foil around vegetables.  


Grill Italian sausage and vegetable packets over medium high heat until sausage is cooked through.



On sandwich buns, place Italian sausage, red peppers, and onions.  

 


 Spread brown mustard on top bun if desired.  Makes 3 servings.


My husband and I grew up in Iowa.  There was a little hole in the wall restaurant that made this sandwich.  Why is it that the little local dumpy restaurants always have the best food?  The restaurant that made this sandwich became so popular, they decided to upgrade to a bigger and fancier place, but some how the food wasn't as good as the crowded little shack.

Grilling Tips & Recipes





My husband loves to grill.  I don't know what it is about cooking outside, but the man loves it!  Maybe it is the fire.  Whatever it is I am not complaining.  I love to have help in the kitchen, or in this case the back yard.

Here are a few simple grilling tips for those of us who don't grill often enough. 

1.  Trim the fat to 1/8 inch on your steaks to prevent flare ups.

2.  Grease the grates to prevent sticking.  Use a pastry brush or dip paper towels in oil and evenly coat the grate.

3.  Preheat your grill.  This will help you have a consistent result when grilling and give you a great sear on your steak.

4.  Marinate your meat to add more flavor and to tenderize it, or use a rub for extra flavor.
5.  Use tongs when turning meat.  If you pierce the meat with a fork, the natural juices will escape.

6.  Don’t fuss with the food.  Let the food develop grill marks before flipping. 

7.  Soak wooden skewers in water for at least 20 minutes before using them on the grill.
8.  If you have a flare up on the gas grill, don't try to douse it with water.  Close the lid on the grill and turn down the heat until the flame goes out.

9.  Don’t cross contaminate food.  Use clean plates and utensils when removing cooked meat from the grill.

10.  Let your food rest a few minutes before serving, so the juices will be reabsorbed into the meat.

Grandma's Old Fashioned Fudge

3 cups sugar
1 1/2 cups milk
7 teaspoons cocoa powder
2 teaspoons butter
1/2 teaspoon vanilla 


In large saucepan, combine sugar, milk, and cocoa.  Mix well.  



Over medium heat, cook until fudge makes a soft ball.  
Stirring occasionally.  


To test the soft ball stage the way my grandmother did, drop a small amount of the fudge into a cup of cold water.  If the fudge forms a soft ball, remove the saucepan from the heat. 


Add butter and vanilla.  Beat until fudge slightly thickens.  


Pour onto a buttered plate.  Cool.  Cut into squares.


Some people like a fudge with a soft texture.  I like mine firm like candy.  My mom adds 2 tablespoons of peanut butter to the recipe at the same time she adds the butter and vanilla.  It makes a delicious peanut butter fudge.

This is my favorite fudge recipe!  Growing up, we would have it with popcorn in front of the TV watching a family friendly movie.  I have been at home for the last couple of weeks.  We rented a DVD and my mom made this fudge.  It brought back so many happy memories!

Summer Slow Cooker Tip


I love to use my slow cooker in the summertime!  I get a delicious meal that cooks while I am away, and my kitchen stays cool. 

A trick I use every time I use my slow cooker is to spray the inside of it with non stick cooking spray before I add the ingredients.  It makes clean up a breeze.
